Also coming up at this time of year is one of the most productive veggies out there – the courgette.
"It's amazing to think that each of these plants will produce kilos if not tens of kilos of courgettes," muses Hugh.
Hugh's so keen on the gourmet gourds he's got to discipline himself from picking all the tasty little greens. He's employed a 'rule of finger' - he's only allowed to pick courgettes that are bigger than his biggest finger.
Then it's into the pan for a summery snack of courgette and mint on toast.
