Strawberries are the taste of British summertime and at River Cottage, Hugh is making merry with the berry.
He's throwing the rulebook out of the window and looking for new recipes to showcase the berry best of luscious fruit. If that means sinking a few cocktails along the way well that's a challenge Hugh is prepared to rise to.
Once you've grown or gathered all your berries you want to make the most of them. Hugh macerates his with sugar and cider vinegar to give the delicate fruit a longer fridge life.
In this delicious syrup, the strawberries make a perfect base for a summer brunch of strawberry eggy bread and a strawberry thickie.
