The veg in Hugh's garden are growing well but they've had a challenging few weeks to make it this far. "The gardener's most feared foe was targeting our tender seedlings with ruthless efficiency," explains Hugh. "It's time to declare war on the slug."
The River Cottage gardeners have booby trapped the lettuces with the one thing slugs like better than lush leaves - cheap lager. But with up to 50 slugs per cubic metre of garden, it'll need more than a couple of cans to keep Hugh's cabbages safe.
Slugs are usually fed to the chickens but Hugh's wondering whether they can be put to tastier use. River Cottage chef, Gill, is a fan of snails and after a little persuading he agrees to slug it out with Hugh in the kitchen to try and devise some tasty slug treats.
After removing the slime and simmering in stock, Gill tenderises the slugs in a tomato sauce. "Will it be the new bolognaise?" asks Hugh. Not by the look on Gill's face. The pair bravely attempt a little slug satay and Hugh rustles up slug fritters - but the jury is out with the River Cottage crew.
