It's time for the re-launch and the team are feeling nervous about their big night. Chris is struggling to focus but manages to get the appetisers out in record time.
The food is a hit but service is still too slow and there's a queue forming at the door. In his panic Chris decides to cut corners and pulls the mashed potatoes off the menu rather than have to peel some more. "We can't be bothered?" accuses Gordon, questioning Chris' decision. He hammers home to the partners that standards are everything.
After this final pep talk Chris gradually finds his groove and for the first time ever tables start turning. The new menu is a hit and the restaurant sees a swathe of satisfied customers.
"You're right," Chris tells Gordon with a grateful grin at the end of a busy night. But Gordon's still cautious. "The minute I'm gone it's up to you guys," he tells them. "One thing you have to do is make money to survive and that means a hunger to make it work." With that he bids them farewell.
