To convince Chris that rustic cuisine is the order of the day, Gordon has organised a local farmers' market right on the restaurant's doorstep.
A host of local producers have turned up to show off their home-grown wares and Gordon's even roped in a town crier to herald the dawn of a new menu, offering strictly local grub.
Chris spends time chatting to the local producers, including the ladies from the nearby orchard. They're keen to get involved with the restaurant and Chris is soon swapping numbers with a swathe of suppliers.
Brian loves the new look bistro and can finally envisage where he fits in. But the jury is still out for Chris. It's clear the cautious cook is not a fan of change.
