As customers begin to leave, Gordon takes Rick and John to one side and encourages them to dig deep: "It's not the end of the world. If you give up they give up," he tells them.
John decides it's time to get bossy in the kitchen and inspire the staff to up their game. "You sound just like Gordon," says Rick as John gives the cooks what for.
The kitchen switches to high gear and the customers are impressed with the cuisine. "The best ribs I ever had," says one satisfied customer. "We will be back," promises another.
Having received the local seal of approval, J Willy's is firmly back on the road to recovery - but that doesn't mean the staff can take their foot off the pedal. "Now that we know how to do it," says Gordon, "don't stop."
