Gordon takes a stroll around the kitchen to assess the damage and finds festering chicken, rotten potatoes and putrid veg. "And we're sat here wondering why the business is on its arse," sighs Gordon.
Desperate to prove Gordon wrong, Rick and John clear out the kitchen leaving it spick and span. "It's a fresh start," insists an optimistic Rick.
The next day Gordon teaches the staff how to make a barbecue sauce from scratch and rustles up a new hamburger special made with fresh ingredients. Everyone's eager to impress and the burgers are selling like hot cakes. But the pressure gets too much in the kitchen and orders start getting confused.
Food is sent back to the kitchen but the cooks are all out of beef. With no one taking control of the dilemma, the staff revert to cutting corners and standards soon start to fall. It's all too much for one sensitive customer who breaks out in tears over a substandard bread roll.
