The 'long egg'
Jamie demonstrates the 'long egg' used in catering, to make slicing eggs quicker. Even if we buy free range eggs, we often forget about the other ways that egg products are used in our food. Jamie tells us that store bought mayonnaise may well contain eggs from caged birds.
