Louisiana is the birthplace of jazz and the home of America's Mardi Gras but in terms of cuisine Jamie's not sure what to expect. "I don't even know what is at the heart of this food," he admits, "but I know it's so far away from anything I've ever done and that is exciting."
As well as its party lifestyle, Louisiana has hit headlines more recently as the victim of devastating hurricanes. In 2005 Hurricane Katrina left most of New Orleans under water and Jamie visits the city just days after Hurricane Gustav has blown through town.
Jamie stops off at New Orlean's institution, Dooky Chase's, a legendary haunt frequented by the likes of Ray Charles and President Barack Obama. The 87 year old owner, Leah, is used to getting through tough times but she admits Hurricane Katrina was a hard blow to overcome.
Leah takes Jamie through to the kitchen for a lesson in the city's signature dish, gumbo. Jamie's in awe of the stalwart chef but she seems less impressed. "Can you do anything, Sweetheart?" chides Leah.
