Every year, 30,000 people head to Florida for Pig Fest - one of America's biggest barbecue competitions, with a $10,000 prize. Jamie joins hunter Lonnie Smith's team, Bubba Grills.
"It's like Glastonbury for barbecue experts," says a gobsmacked Jamie.
Jamie cooks a Southern version of stew and dumplings for the 'anything goes' category and settles on a pork shoulder for his meat entry.
The pork is injected with water, salt, cider and apple juice and coated with a secret spice rub before being slow cooked for 12 hours. Jamie sits up with the meat to spray it every half hour to keep it moist and glaze it with butter brown sugar and honey.
Come morning, there's just one final ingredient to add - Lonnie's southern prayer:
"Lord let us kick some barbecue butt in your son's name. Amen."
It's a tough competition. Bubba Grills are placed 29th out of 62 for the all night pork shoulder but scoop an impressive second place in the 'anything but' category.
Weary but happy, Jamie retires for a beer and a nap.
