Next up, Jamie wants to learn about soul food.
"I know all the clichés about the chicken fried this and that but I really don't know what I'm talking about," he admits.
Nicky Bush, one of Savannah's top soul food cooks, explains the term dates back to days when slaves were given the very worst bits of meat that were being thrown out as trash. The people cooking it put their soul into their dishes to make delicious food out of the very cheapest ingredients.
Jamie cooks Nicky his version of Georgia's favourite dish, sausage and shrimp with grits and greens, but to pass muster, he'll have to impress Nicky's 81 year old mother.
"Mr Jamie, you'll have to come a little bit tighter with your salt," says Mum.
They sure like their seasoning in the South.
