Rainbow veg
We're told that for a healthy diet, we should eat fruit and vegetables in a spectrum of colours and winter veg are super for this. With beetroots, carrots, turnips and of course hearty winter greens it's easy to 'eat a rainbow'.
For real winter comfort food crisp roasted vegetables cooked until their edges caramelise are simple to make and so deliciously satisfying that you'll almost be glad it's so cold outside.
