'Heeling in' is a clever traditional way to keep your leeks for longer by re-planting them. Even if you store your leeks in the fridge they will start to go off and lose nutritional value in a few days. Heeling in leeks with their roots still attached means they can continue to preserve their goodness and can live on for months.
