To get every gritty bit of dirt out of the folds of the leek leave the root top attached and slice the vegetable vertically down its length so it looks like a long thin pompom. Then wash the leek with the green leaves hanging down and the white part at the top. Washing the leek the way Jamie is holding them here will just force the dirt back between the leaves.
