
There are generally three types of sorrel and all can be grown and used in a similar fashion:
Rumex acetosa
This herb has narrow, fleshy and spearhead-shaped leaves that have a strong acidic taste. It will tolerate partial shade and grows up to 90cm (3ft) high.
Rumex scutatus
A slender plant with mid-green shield-shaped leaves that the French use for making sorrel soup. It has a milder flavour than broad-leaf sorrel and grows from 15cm (6in) to 37.5cm (15in) high.
Rumex sanguineus
An attractive and unusual sorrel with blood-red leaf veins. It can be grown in the open ground or large containers and is perfect for enhancing mixed salads.
