Jamie Oliver's back - and this time he's preparing a festive feast with help from his friend and mentor Gennaro Contaldo, and Brian the gardener.

In an hour-long special, Jamie is also joined by free range turkey farmer Paul Kelly, and free range goose doyenne Judy Goodman.

They discuss how to choose the best and most succulent bird for your Christmas dinner and Jamie shows how to cook up two fantastic Christmas birds with his best stuffing and gravy.

His garden may be winding down for winter, but Jamie takes a wander to see what is on offer. He finds the garden still abundant with greens and he shows how to make the best out of them with a delicious flavoured butter

If anyone is in any doubt how to make the perfect roast potato, Jamie shows the foolproof way to make this essential addition to the Christmas table work every time.

Finally, while Gennaro prepares some seasonal roast chestnuts in his own style, Jamie rounds off the day with his twist on the classic mince pie. A new series of Jamie at Home starts on Channel 4 in the New Year.

  1. I saw that show, and the tips for the perfect Christmas roast potato were great. Of course you don't have to save the roast potato for Christmas. The flavored butter was fantastic as well and so simple and has been used many times. This great and simple addition to veges is not to be kept just for Christmas dinners. I was always looking forward to the tips and hints provided by Jamie Oliver. Did that Christmas mince pie receipe ever get posted somewhere? Would be nice to have a flavor filled Christmas mince pie for my mid year Christmas party this weekend.

  2. I thoroughly enjoyed the show even though I am extremely hard-of-hearing. Q: will you be releasing a DVD with sub-titles? I am certain that it would be a great hit particularly with persons such as myself.

  4. i tried jamies recipe last year with great success but this year it went horribly wrong! iwant to know why?this is when one put cellery onons etc in baking tray for preping the stock for later and then turky on top before going into oven to cook.i did the same as last year but this year all the veg on bottom of tray burnt to a cinder!!what have i done wrong???

  6. I've never cooked christmas dinner before and so after watching jamies christmas special i went out and bought a free range bronze turkey and pretty much just followed jamies recipe. I have to say it was truly devine. It really was the best turkey i've ever had... the only problem is that from now on i've been told i have to cook christmas dinner every year from now on :(

  7. Fantastic Christmas at Home programme. Have tried some of the recipes with great success. We even like leftover turkey now! Best of all was the weird & WONDERFUL MUSIC at each ad break. Sounded like Children doing Velvet Underground. What Where and How can I hear more, anyone know??

  16. I watched this programme and was inspired to cook goose this year - I have bought the ingredients from memory but would like the recipe to follow - I cant find it anywhere! HELP! I also want the recipe for the cabbage dish - is there a book available?

Ingredients %u2022 100g/3?oz good-quality mincemeat %u2022 25g/? oz dried cranberries or blueberries, chopped %u2022 zest of 2 clementines %u2022 a splash of sherry or brandy %u2022 flour, to dust %u2022 250g/8oz good puff pastry %u2022 1 pack filo pastry %u2022 50g/1? oz melted butter %u2022 1 free-range or organic egg, beaten %u2022 50g/1? oz flaked almonds icing sugar, to dust Preheat the oven to 200?C/400?F/gas 6. Scoop the mincemeat into a mixing bowl and mix in the dried berries, the clementine zest and the sherry or brandy. Dust a clean work surface with flour and roll out the puff pastry into a big rectangle about 20x40cm/8x16 inch and the thickness of a pound coin. Thinly spread the mincemeat over the pastry, leaving a 1cm/? inch gap around the edges. Tightly roll up the pastry, lengthways, like a Swiss roll, place it on a floured tray, and pop in the fridge to firm up. Take two cupcake trays (for 12 cupcakes each) and butter each one lightly with the melted butter. Place one layer of filo pastry over the tray (you may need more than one sheet to cover each tray depending on the size of the sheets) and ease the pastry into each hole. Brush with the melted butter, then cover with a second layer of filo pastry. Brush with butter again. Take the puff pastry roll out of the fridge and, with a sharp knife, cut it into 24 slices. Place each slice, flat-side down, into a filo-lined hole. Brush with the egg and sprinkle a few flaked almonds on top of each little pie, then pop both trays in the oven for about 25 minutes, until cooked and golden brown. Leave to cool, then crack the individual pies out of the trays. Dust with a little icing sugar before serving. PS You can freeze the cooked, cooled mince pies in their trays (just wrap the lot in cling film) or in a plastic container. Just reheat them in a hot oven straight from the freezer.

  31. We were so impressed by your leftover turkey and leek pie on your programme last night that we tried it today with some leftover pork and it was fantastic. tell everybody that this is an all year round recipe, not just for turkey at Christmas.
