With his custard recipe perfected, Heston's ready to put his recipe into practice. "I know brains won't be to everyone's taste," he admits, so he'll need some clever presentation to make this plate palatable.
After cooking the calves' brains Heston deep fries them into delicate little balls and places them aside the calves' brain custard before sending them out to the guests.
"It all counts for nothing if people who are eating this actually don't enjoy it," gasps Heston with bated breath. But he needn't have worried as the guests are in raptures.
"What a clever trick Blumenthal's played on me," raves Danny Wallace. "Give him a thing that looks like something you'd get in a pub and I'll wolf down a brain. I've never been so surprised by food."
