1. I have successfully made the candles this way: (1) Order the latex casting solution from Amazon (2) Make copies of the required number of candles. I used the textured 40mm honeycomb candles (3) cast the white chocolate about 5mm thick on the walls, 10mm deep at the bttom (top of candle) (3) Insert an icecrean twix!!!! (4) pack the twix in toffee sauce. (5) Freeze (6) Drill hole in top and push in small candle (7) Swap for real candles and eat!

2. Would it be possible to have the recipe for the meat fruit please, for my husbands 40th Medieval Birthday party. I have the ingredients, but not the quantities. I am currently making his sugar cube castle birthday cake which he cannot eat!!! Many thanks Lois

6. Hi Have you tried Alan Coxon`s Mediaeval 15th Century Old English "Ale-Gar"? Absolutly Fantastic ,it apparently is new on the market and he has been developing it for the past 10 years, beats the hell out of Balsamic and even Worcestershire sauce. Check out his website www.alancoxon.com

7. I do not understand people that forward negative comments about any of these recipes and shows, as my wife and I have thouroughly enjoyed them all. We would like to follow some of Hestons recipes please, Is there some possibility of gathering details of all the recipes he so masterfully executed, thanks again.

12. Meat Fruit - good idea, but if raw fruit was considered to be diseased in Medieval times, surely to achieve the equivalent effect in a modern day feast you should make raw meat out of fruit? The idea is to make something that seems disgusting but is actually safe, Meat Fruit is vice versa?

15. I was amazed by the use of lamprey in this menu, and more so of the only mention about lamprey in Europe was Latvia. There is a place in Galicia - SPAIN in which Lamprey has its own gastronomic festival and the fish is cooked in many ways, the most typical is in its own blood, still done now ! this place is called ARBO and the party is in April every year. http://www.concellodearbo.org/museo/EN/index.html

17. He doesnt make any pretence about historical accuracy, what he is doing is using different periods in history as inspiration. Shows are fantastic and I have never seen a dish as pretty as the Mock turtle soup

18. How does HB define Middle Ages? Most people make it before 1500, some before 1600, but there was no chocolate then. The first reference to (drinking) chocolate was in 1604; the first reference to chocolate as a solid confection was in 1659. (Source: Shorter Oxford English Dictionary.) Sack your research assistant, HB!

20. The "gastronomic trickery to entertain and thrill their guests" created what were often referred to as sotilties (as in "subtleties"). One did not appear in every course. Rather, they sometimes appeared between courses, and there were a limited number in a feast. To create a feast largely of sotilties is challenging and amusing. But it is not at all typical. In fact, such a menu misrepresents the reality of a medieval feast. Nice trick for TV, but bad history. Further, the line "the rest not expected to make it past 25" is a misrepresentation of life expectancy. Many children died in their first or second year, which skews the average (and isn't necessarily that different from the 19th century). But once out of childhood, most people (well, other than women in childbirth) lived fairly long. And while the plague was terrible, and seems to fill our imagination of the middle ages, it was not a constant. Wars were also disruptive and created famines. But most of the time, life just went on.
