Charlie Cottrell meets man who made Heston eat mealworm

Dr George C. McGavin, Honorary Research Associate at the Oxford University Museum of Natural History, talked Heston into eating insect larvae and fried mealworm. Now, he says, it's your turn.

Heston's known for his adventurous menus - did your insect cooking floor him?

Yes, I was surprised that he had not done more cooking with insects! We can't feed the world on beef etc... and the fish is running out fast. Insects are going to be the future. There are more than 40 tonnes of them for every human being alive.

What tips did you give him for choosing and cooking insects?

Avoid brightly coloured species that might contain toxins and obviously those who live and feed in muck, dung etc. It's best to go for cryptically coloured species and insect larvae of wood boring or herbivorous species. Bee larvae are very good, but there is a global decline in bee numbers so best lay off them for the time being.

What was it like having Heston in your kitchen?

Great fun. Heston really liked my mealworm flour bread. My kitchen has never looked so clean - I decided I would need to scrub the hob prior to filming; it took rather a long time.

Do you think cricket ice cream or mealworm mash could work on the menu at the Fat Duck?

Absolutely - no question! I am hoping he will invite me to sample whatever he puts on the menu.
