After three days of training in Popham, it's time for the staff of Little Chef in Kettering and York to work Heston's magic back home.
"They want to learn and they are really up for it," says a happy Heston.
The proof is in the eating. Off the A64, Heston visits the Kettering restaurant and finds another Popham.
But does it taste as good? Heston thinks so, as the coffee and Olympic breakfast send him into nostalgic reverie.
It's the same story in York. Meeting up with Ian Pegler once more, Heston has a burning question.
"Ian," he says, "when and what is the next phase?"
"Another five in 2010. I'd like to do the whole chain," Ian tells Heston. "Provenance and quality are our byword now."
