Ian and Heston had a tricky relationship that resulted in Heston walking out on the project. But when they meet again, Ian could not be more helpful. He reveals that sales at the Popham restaurant have doubled.
"Here's the million dollar question," says Heston, cutting to the chase. "Are you going to roll out the model?"
"Absolutely," confirms Ian, "why wouldn't I with that sort of success?"
Ian's plan is to launch two more Heston-style restaurants immediately, with five other sites ear-marked for transformation, right down to the talking toilet, within the year.
