In the second stage of Heston's Little Chef mission he's revamping the chain's best-loved dish – the Olympic Breakfast. It's not clear where the dish got its name and you're unlikely to see Chris Hoy chomping his way through the mammoth fry up on a regular basis, but it's definitely a hit with the customers.

"The first thing to fix is the thing least broken," says Heston. As the Olympic brings in 50 per cent of total sales it's a winning candidate. But Heston needs help. His revamped menu will take more cooking than the staff are used to so he wants to train up a Little Chef assistant to help him from the inside.

"In order to make my new Little Chef great British menu work I need a Little Chef member of staff that can become my right hand man," explains Heston. Cue some nationwide Little Chef auditions.
