Gordon gets ready for another round in the F Word kitchen - this time he's looking for Britain's Best Local Restaurant

What can we expect from the new series of the F Word?

It's the fifth season. For me this will be the most important series, because we're looking for Britain's Best Local Restaurant. It's about discovering talent that we, as a nation, didn't quite realise we were sat on. The last 12 months has been a horrific time for the industry across the board. When you look how many restaurants have been closing in the past 18 months on the back of this recession, it's a great shame. So we're trying to discover the best local talent, and bring it into the F Word kitchen, where they'll go up against each other. So we'll get the two best local Chinese restaurants, for example, and we'll have the chefs in to cook against each other. And we'll do the same for each category. This isn't about the top, fancy restaurants. Mum might like eating out, but she'd never go and spend £90 a head, she might spend £25-£30. So these restaurants have to come in under £25 a head.

What types of cuisine have you tried?

We've done it all! Chinese, Indian, Italian, French, American, Spanish, an open category. We've discovered some real hidden gems. We put the most amazing F Word panel together to judge it. It consists of one of the most articulate palates in the country, Jean Baptiste - he grew up in restaurants. His parents and his uncle have a two Michelin-starred restaurant in Lyons, so he spent his summer holidays in restaurants when he was at school. Janet Street-Pensioner is, as you know, in her 64th year, so she's taking advantage of her free bus pass by going round and looking at these restaurants incognito. The biggest surprise of all has been on the back of the website. The numbers have been staggering.

This is people nominating restaurants?

Yes, we asked people to nominate on the Channel 4 website. We had 10,000 nominations for 4,500 restaurants. And we did it without even announcing it properly or launching it anywhere other than on the website.

How on earth did you narrow that down?

Good question! First of all, it depends on the amount of nominations and how much support each restaurant has. Then we've had several visits, across the board, in terms of the panel visiting them. I've spent the last month travelling around the country eating up to five meals a day, nipping in, having a course, nipping out. And listening to the customers, seeing how passionate the customers are. The response has been phenomenal. It's incredibly positive. Narrowing them down and putting them up against each other has been a tough call, because the talent has been so overwhelming.

You're dealing with all these different genres of cooking. Do you have a favourite?

It's hard for me to say a favourite. I suppose I grew up with curries. I grew up on a council estate in Stratford-Upon-Avon. Before that, we lived in a flat in Birmingham. So curry was a staple diet. Porridge in the morning, curry for dinner. It's the nation's favourite dish. The Indian restaurants featured in the category have been exceptional.

So the two best in each category come in to the kitchens here and cook. How are they judged?

They cook for the F Word diners, who are 'discerning'. I'd love to say pompous, jumped-up little f**kers, but you can't because they're customers. They all think they're critics, they're all wannabe AA Gills and Michael Winners and Fay Maschlers - which is a potential nightmare for any chef out there! However, there is some very good, constructive criticism coming back.

And, overall, you're of the impression that cooking in this country is in pretty rude health?

Yes, definitely. And one thing that this recession has taught every restaurant and every restaurateur in this country is the value of the customer - the customer is king. So I'd like to think the last 12 months has removed the snob factor of food. It's become less intimidating and more enjoyable. It's been a breath of fresh air in that respect. All these selective menus 'you will do, you will have, you will choose, you won't mix…' bullshit - all gone. The whole restaurant scene now is slightly more humble. The struggle for these independent places is against these chains, these conglomerates that are swallowing up and wiping out independent restaurateurs. We need to fight for our local places, and put a stake in the ground and say, 'No, we're not going to give up and move out so a Burger King or a Pizza Express can move in'.

How about the other aspects of the series. Are we having livestock rearing again in this one?

Yes. Janet Street-Pensioner is now running a farm. She has these amazing Mangalitza pigs, Dexter cows, and chickens. So God help them. They say the abattoir is somewhat traumatising. Waking up in the fucking morning and looking at those teeth, and Janet Street-Porter's voice screaming at you has to be a nightmare for any animal, never mind the slaughter house. So this time we're preparing a somewhat unique mixed grill, an amazing finale with the chickens cows and pigs.

Who have been the best and worst cooks among the celebrities that you've had on the programme?

The worst ever would have to be James May, with his fish pie. Even though he won, which was extraordinary. He was drinking a bottle of red wine throughout the challenge, so I thought it was in the bag. And Geri Halliwell as well - disaster zone. You won't be seeing either of them opening a restaurant.

  1. too much drama overlooking the truth. How can the best local restaurant have a chef who can't even cook dessert ?!!! and played it totally safe in the final. Whereas The Pheasant showed bravery and ambition with everything they did. you have to admire that.isnt that what we want from Chefs? . .. The best local restaurant? isn't that about the restaurant dining experience, staff etc as well, and not just because Gordon thought Aktar was a talented Chef. If it was, why didn't the Pheasant win as there service was so superior, or was I watching another programme? Very disappointing outcome in the way it was judged. Interesting how Gordon went to India as well....maybe a touch of biased to Indian food one wonders...

  2. you had a special about diving for crab and at the end you had cooked off some crab legs and served it with a mayo/crene fraiche with lime juice. I would be interested in getting the full recipe thanks for your time

  3. I agree with the majority of comments. The Pheasant and Santa Maria were by far the better restaurants. We have watched all Gordon Ramsay's series on TV but will NOT watch anything in the future as I think Gordon is no longer in tune with the expectations of the dining public. Throughout the series, he continually emphasised that the competition was about the whole dining experience, not simply the food. They why did Lasan win when they continually failed to deliver on customer service??? Diners even returned food, un-eaten which NEVER occurred with the Pheasant and Santa Maria. What's wrong with plain cooking and friendly atomosphere? The point is that diners return time after time to eat there? I jokingly said to my partner that, if Lasan won the semi final, I would not watch the final. What a waste of 10 weeks viewing!!!!! Gordon's interview hinted that curry was a personal favourite. The others didn't stand a chance as he'd made his decision at the start of the series!!! Adios Gordon - Jamie and Levi for us from now on.

  5. i love all your shows it drives my hubby mad but i think that you are great . i would love to come to one of your restraunts to try your food but it would have to be cooked by you i love you to bits i think that you are gorge (well hot ) when i see you cook it makes me want to do the same i think your great xxxx

  6. Just wanted to add in my 2 cents worth. I agree with most of the other commenters that the better restraunt did not win. What initially started off as a search for Britains best local restraunt quickly deteriorated into a search for who could potentially be Britains best local restraunt chef. While based on his techniques and offerings Aktar may have been the superior chef (except for desserts of course), clearly both the Pheasant and Santa Maria surpassed Lasan in every other category.

  7. Hi Gordon,We have watched all of your programmes,and enjoyed them greatly. Best local restaurant being one of them, we watched this with great interest, but the final was a let down.It did not seem to follow the criteria you kept on about ie service at front of house, also does the restraurant shut when Indian chef is sick or on holiday.As he does not communicate with his staff,i don`t mind who wins at the end of the day, but lets have some consistancey. Looking forward to new Hells Kitchen...

  9. lasan over the argentine restaurant i dont think so lasan didnt deliver much where as the argentine restaurant was consistantly good if you are going to run a competition try doing it fairly where the best performers go thru not the 1 he thinks has potential

  10. i can see why Gordons buisness is going wrong,top resturant,a glorified posh indian take away,OMG......the reason he did not pick "The Pheasant" was because the chef is better than him,also in Gordons words "best all round",excuse me go to Lasan as long as you don,t want a dessert,there useless at desserts,but best all round !!!! posh indian take away by Gordon and 2 people who can,t cook by Raymond Blanc,thats two programes i won,t be watching again

  11. Absolutely love the show, and find Gordan Ramsay quite entertaining. Most importantly, I love cooking but have been bored with my cooking recently. I've started to feel like I'm making the same thing every night, just alternating types of veggies, seafood, and poultry. Watching the F word has helped me inject some life back into my cooking. For that I give Mr. Ramsay a big thanks. I also like the mini segments thrown in the mix.

  12. i have been a chef for 30 years all chefs swear and i am 48yrs old but wear unique clothing wo0rking the hours what we all do its nice to look individual because you spend more time in work clothes then ordinary clothes it shows your personality i have customers wanting to know when i am going to have a new set even the duke of devonshire on the chatsworth estate derbyshire thought it was brill we are not in the middle ages or france (thank god) so chill out and get real

  13. Watch all Gordon Ramsay programmes& read his book. Extremely disappointed with the f word final. Semi final 1 should have been won by the Argentinian restaurant taking into account service, food and atmosphere. Gordon had decided early in the series that Indian restaurant would win and was totally biased. Gone down in my estimation

  14. I watched last nights final and felt compelled to write something as I was very disappointed with the result. I agree with other fellow disappointed peoples comments below and part of me feels Gordon Ramsey chose Lasan to be controversial as he really built The Pheasant up to just knock them down big time. I gave this F Word series a go even though I'd grown bored of Gordon Ramsey's attitude in general but wont watch the next series. I really hope The Pheasant is even more successful after the show and Jay and the staff dont let this travisty of justice knock their confidence in what they do

  15. you probably think im old fashioned..once upon a time chefs/cooks all would wear a chefs hat when preparing and cooking food..my late father was a chef at The Chateau Impney Hotel many years ago and always wore full uniform ..then had his own restaurant .. my brother did most of the cooking..he always wore a chefs hat in the kitchen and whites..and he would also go into the restaurant and see his customers. .my husband and I were watching the programme last night and noticed the chef who came second had longish hair all over his face..not very professional..I think he swore more than you do!!I dont think I ever heard my brother swear once while working..the only time we see them wearing full uniform is in the other programme of The f word..is where you are with other celebs and members of the public who are already trainee chefs etc teaching them to cook etc..well thats my opinion anyway.

I have never actually felt so disappointed with a show, I loved the f-word for a long time and enjoyed all of Gordon's shows, but for all his talk, to see him take the PC option and at the end of the Best local Restaurant was as amazing let down, gut less choice to pick Lasan over Pheasant, when he clearly said the Pheasant was a better Restaurant. As Gordon says "BOLLOCKS" well thats what I think of the result of the F-Word!

  17. disapointed at the final result, "local" means produce, staff employed, perhaps your competion should of been for the best international in the uk not local. Whenever you travel the world you only find most english places as greasy spoons why cant someone promote the british isles except bloody delia

  18. We have just finished watching the F Words Best British restaurant and to say we were disappointed would be an understatement. We enjoyed the program and Gordon but felt that he lost his focus on good local restaurants and turned it into a fine dining competition. We felt that it should be a celebration of what these restaurants do really well and how they make their customers feel not on how they cook in a micheln star restaurant. I would not want to nominate my favourite local for fear that they would turn into a snobs only establishment. I hope that Gordon will step back and review what he is hoping to achieve and we will look forward to the next series.

  21. hi ya i would just like to say that i think you should off put through the other restaurant as when watching this the people you put through were rude and didn't work well in a team and they made me fill very uncomfortable. the other people were loving every minute off it and work really well in a team and put all there love in to what they do....just thought i would like you to know as i was very disappointed with your choice.....you have amazing restaurant and one day would love to come dine there....

  23. can u tell me why you are showing the thai restaurants again tonight for the third time when it is advertised that it is spanish restaurants tonght in the tv mag. I never miss an episode of the f word both here and the ua series but it gets a monotonous to watch the same thing over and over again

  25. oh Gordon king of kitchen.You tell me you grew up on curries but you still not manage to experience Anoki in Derby Nottingham or Egginton. Why oh Why? man I'm getting old and tired but hoping one day you will pay a visit. Lasan amazing.Curry corner incredible. Anoki you will never know. Please send some one down as I know you will visit yourself.I will pay for the train ticket just atleast to tell me "good but not good enough" I can live with that. Don't want to believe "its not what you know but who you know" .Whoever picks this email please show it to him.Surely he is all mouth there seems to be something about him which tells me he respects talent.
