The brigade are kicking things off with a starter of pan fried fillet of Cornish mackerel .
"Mackerel can be easily overcooked, then it goes dry," warns Gordon, "it should be served pink."
Can the brigade avoid sending out rubbery fish? No. Mica's is all overcooked and has to be served to the bin.
The rest of the brigade have it covered though and open the scores on the doors with an impressive 45 out of 50 diners agreeing to pay.
