As the brigade get to work on the smoked trout rilettes, Gordon takes the time to get to know his kitchen-mates a little better. First up, Babs.
"Where did the name 'Babs' come from?" he asks.
When Babs reveals she got her funny moniker while working in a fast food restaurant, Gordon's face falls.
"Get out," he says.
" I was only there for two months," protests Babs.
"That's 59 days too long," grumbles Gordon.
Despite Gordon's concern's about his brigade's training, the Cherry-Olivers nail the starter and a smashing 43 out of 50 diners are happy to pay.
"Don't fuck it up on the main course," says Gordon encouragingly
