For the main course Gordon has the brigade cooking Dover sole with shrimp butter.
"It's one of the most expensive fish on the market," chirps teacher's pet, Jade.
To see if Jade's got what it takes to cut it as a chef Gordon takes an unprecedented demotion and puts Jade in control of the F Word kitchen.
"You're running the hotplate," Gordon says. "I'm going to be the comis chef. I'm doing nothing unless you tell me to do it."
The power suits Jade.
"You're doing two tables of four so you only need two pans," he barks at his ignorant, four-pan-wielding underlings. "How long on your sauce, Ramsay? Pronto!"
Under Jade's direction the brigade scores 38 out of 50 paying diners. Jade is crestfallen.
