The brigade watch as Gordon breezes through the method for making the starter spinach and goat's cheese soufflé.
Whip the mixture to a smooth batter, pour neatly into ramekins and tap to remove air bubbles. It all looks so simple when Gordon does it, but when the brigade gets going it's a very different story. The first orders come in and Wendi's arms are already starting to ache.
