It's now time to transfer the beer from the plastic barrel in Gordon's garage to the bourbon-soaked oak barrel that will give the beer its characteristic vanilla and caramel flavours.
Dougal points out where the barrels have been charred before pouring bourbon in to them and the all important golden layer where the bourbon has soaked in.
