There are some ingredients you can buy and there are some you have to stay up all night for as Gordon discovers when he goes in search of one elusive British delicacy.
The river Severn is the longest river in Britain. Most of the time it flows peacefully through 220 miles of British countryside. But every so often it's hit by a phenomenal tidal wave, known as the Severn Bore, which charges in from the North Atlantic bringing with it one Britain’s rarest delicacies: elvers.
Gordon's a huge fan of these baby eels but if he wasn’t to stand a chance of catching any, he's got to be prepared to put in the hours.
