After tasting the wort, Gordon adds the first batch of hops. These will add flavour, aroma and a touch of bitterness to balance out the sweetness of the malt.
"These hops are very good. They're like a pinot grigio," says Dougal. Very nice.
Jack arrives home and adds a helpful nose just as Gordon and Dougal are boiling the beer to impart flavour to the mix. Then a second batch of hops goes in.
The final step is to pump the mixture into a fermenter and add live yeast to turn the sugar into the all important alcohol.
Then it's into the all important barrel for 30 days of flavour intensifying.
"I just hope it fucking works," says Dougal.
