Anything too strong or too bitter will ruin the flavour of the meat. Gordon's looking for a beer that's smooth, not too gassy and that doesn't have a strong aftertaste.
As Will leads Gordon on an ale-based tasting tour, Gordon's still not looking convinced that beer is the way to go with a delicate meat like veal. His sensitive palate isn't wowed by any of the early beers he tries and as he runs gagging behind the bar, it's clear he's definitely not a stout man.
Finally Will brings out an Inns and Gunn beer. It's brewed in Scotland, has vanilla and caramel flavours and most importantly, no bitter aftertaste. Gordon loves it. This is the beer he wants to imitate for his own home brew.
But according to Will, that winning flavour comes from the barrels the beer is brewed in. If Gordon wants to brew his own he'll need to speak to a man about a keg.
