The tricky dim sum parcels turn out to be child's play in comparison to the next lesson: cheung fun (paper thin sheets of rice and potato flour wrapped around fillings like prawns and pork).
"The most important point of this is not to be afraid of scorching your hands in the steam," translates Fuscia with a big grin.
The cheung fun is slippery and delicate. Rolling the casing without tearing it is tricky. It's been a long time since something in the kitchen left Gordon feeling this clumsy. And his mentor won't make any allowances for newbies.
"He's a fucking Rottweiler," mumbles Gordon.
