Like pasta, the secret to good dim sum is as much about the wrapper as the filling. But unlike in an Italian restaurant, there's not a machine in sight. The paper thin skins are made by expert hand and the blade of a cleaver.
Then it's time to fill and seal the parcels. It's the tricky finger work that makes dim sum such an art so Gordon will need to be calm and patient. Oh dear.
