More tips In this video Gordon’s shows us his own technique to check for the “doneness” of a steak, but there a number of others you can try. Another classic method is the “thumb pinch”. Pinch your thumb and index finger together and prod the fleshy pad below the thumb with your other hand – the same amount of give in the meat indicates a rare steak. Now touch your thumb to your middle finger – this is the equivalent of medium rare. Thumb and ring finger is medium. And finally, with almost no yield at all, thumb and little finger signifies well done. Try it for yourself – it really does work.
