Salad days

A light and crisp salad is the perfect accompaniment to Gordon's hearty main course of steak and chips. For the salad dressing, forget the premixed bottled stuff from the supermarket, in this video Gordon's going to show us how to make our own.

With his perfect classic vinaigrette prepared to order, he's also got some essential tips on how to dress and finish your salad for the very best results. Not only is it a 'must-watch' as you prepare for the live Cookalong, Gordon's video will help you see salad with new eyes. No longer just a garnish to be pushed to the side of the plate or eaten dutifully as roughage, Gordon's tips give salad the culinary credit it deserves as a worthy part of the meal that's really worth savouring.

Play with your food

On the big night Gordon's going to keep his dressing simple with a classic vinaigrette made from olive oil, white wine vinegar, salt and pepper. Everyone has their own tastes, so if you like things a little sharper try adding a dash more vinegar; or a little mellower, a fraction less.

Once you've mastered it, try experimenting with additional ingredients to add extra flavour notes. A little Dijon mustard will really liven things up, as will a squeeze of lemon juice. Infusing with a couple of garlic gloves will produce a delicious garlic vinaigrette, and fresh herbs such as basil or oregano are another classic addition. The world really is your oyster.
