Stock up your cupboards - it's time to take part in Cookalong Live: The series week 4

Note: The Cookalong isn’t being repeated on Saturday, but you can watch it all again on Channel 4 Catch-up

You will need (serves 4 for each course, with the exception of the cheesecake, the portions of which serve 6–8)
Salt, pepper and olive oil are required for the main course

Starter: Prawn cocktail

Prawn cocktail

Approx 250g of cooked small peeled prawns
1 ripe avocado
½ iceberg lettuce

For the Marie Rose Sauce:
Approx 200g fresh mayonnaise
2-3 tbsp tomato ketchup
Pinch cayenne pepper
1 lemon
Dash Tabasco, to taste
Dash Worchester sauce, to taste
Splash of brandy, to taste
Lemon wedges, to garnish

Main: Steak Diane

4 x small sirloin steaks, approx 200g each
3 shallots, peeled
100g chestnut mushrooms, cleaned
Approx 30g salted butter
1 garlic clove, peeled
Worcestershire sauce, to taste
1 tbsp Dijon mustard
50ml brandy
200ml single cream
Small handful of flat-leaf parsley

For the sautéed potatoes:
Approx 500g-600g small charlotte potatoes, cut in half
2 garlic cloves, peeled
Few sprigs of rosemary

300g peas

Dessert: Mandarin cheesecake

Mandarin segments

2 x 298g tins mandarin segments

For the base:
75g unsalted butter, plus extra for greasing
175g digestive biscuits

For the filling:
400g cream cheese
2 vanilla pods
100g icing sugar
1 orange, zested
300ml double cream

  3. Tonight is our first attempt at cook along, and we are really excited about it!! we have the 70s music pumpin n just about to poor a glass of wine........I LOVE U GORDEN!!!! DONE!XX

  4. Is there anything I can use instead of brandy for the steak? We don't drink and it'll be a waste of money to buy a bottle of brandy just for this recipe.

  5. To reduce the fat content: Half fat creme fraiche can be used instead of cream for the sauce for the steak. Curd cheese can be substituted for cream cheese. Do Not substitute soft cheese for curd or cream cheese - it tastes different. HTH Carrie

  6. Gordon - we are SO enjoying our Friday nights cooking along. We went away for the weekend self catering for the last one, but took all the ingredients etc with us and my husband shouted the instructions from the lounge to me in the kitchen! We could hardly do anything for laughing, but we did enjoy the crab starter and have in fact bought the ingredients and made it again! Superb!!

  7. Having purchased and perped everything we found out that the week four program is not broadcast until the 21st of November. I am sure we will find out what we did wrong next week then. Good luck all those who made similar mistakes
