Usually prompt a 'love them' or 'hate them' response but used in sauces, anchovies are less of an assault on the taste buds than in their more familiar guise as a pizza topping and add a lovely oily saltiness to dishes. Boquerones are snow white, vinegar-cured anchovy fillets eaten as tapas and never cooked.
Good with: potatoes, eggs, cream, steak, fish dishes.
