Back home in England Tommi recreates a fresh fish dish she picked up in Galicia. Sea bass carpaccio uses the fish in its freshest form - raw.
Tommi admits some people may be scared of a raw sea bass salad but she argues the freshness and quality of the fish means there's nothing to fear.
She serves the carpaccio with some new potatoes and a homemade salsa verde.
