Saffron is a powerful spice and can easily overpower a dish, but used sparingly it can really enhance recipes, particularly with seafood.
Tommi uses the spice she brought back from Castille to make a simple but tasty mackerel dish using fabulous Spanish recipes like olives, garlic and of course, saffron.
