First stop is La Mancha, home to the fictional hero, Don Quixote.
La Mancha means 'land without water ' and summer temperatures here reach 45°C, making great conditions for rearing sheep. This herd makes what Tommi thinks is the king of cheeses - Manchego.
The taste of Manchego is to Spain what Cheddar is to England and Tommi can’t wait to get cooking with it
