Spanish cooking isn't just about garlic, olive oil and wine, Tommi explains. When the Moors conquered Spain they brought exotic spices like coriander, star anise, cinnamon, cloves and nutmeg with them. These full-bodied flavours are now part of Spain's culinary heritage.
When cooking spices, dry toast them in a frying pan for one minute to bring out their flavours.
Tommi uses her Spanish spice to make one of the country's favourite tapas dishes.
