Attending a pig slaughter in the middle of the sleepy Spanish town was an eye opening experience for both Tommi and Guy.

"Imagine you were in Saffron Walden," says Guy, "wouldn't you find it slightly unnerving to come across a scene like this?"

Tradition and a long history of poverty means that the locals are passionate about using every part of the pig. The butchering, like the slaughter, is an expert and time honoured skill.
