Back at home, Tommi reveals her own leg of ham. It's an extravagant ingredient but, as she explained to Guy, when the meat is this high quality, the flavour is unbeatable and a little ham goes a long way.

Tommi uses the ham to make a salad like the huge, fresh salads she was served in Spain. Big healthy salads feature heavily in Spanish cooking and everyone tucks in.

"It's heaven on a plate" says Tommi.
