Now to the tasting. Take a generous sip of the whisky and hold it in the mouth for as many seconds as years the whisky has been in the barrel for. So, for a 10 year old whisky, you're holding it for 10 seconds. If it's a 15 year old, it's in the bouche for 15 seconds.
Run the whisky over the tongue and around the mouth, chew it and draw some air in a delicate slurp - like you would with wine tasting.
When your seconds are up, swallow and then breathe in some fresh air.
You'll feel a little burn and a warm glow.
