Sam Avery tried his hand at the ever-popular elderflower Champagne recipe from 4Food’s Hugh Fearnley Whittingstall.

Sam set out his ingredients: 4 litres hot water, 700g sugar, the juice and zest of 4 lemons, 1 tbsp white wine vinegar and about 15 elderflower heads, in full bloom.

Just wondering! is it possible to make this elderberry champagne out of the growing season,substituting the fresh elderberry's for some processed healthy alternative,maybe something available in a can,does this seem sacreligious in comparision to the beautiful fresh concoction.Was thinking it would make a perfect christmas gift!also is there a simple way of monitoring the alcohol content of the mixture with a simple reasonably priced apparatus either before and after bottling.Any practical comments would be truely appreciated-Yours sincerely Cathalpm from the west of Ireland
