Sun-dried tomatoes taste delicious on pizzas, in pasta or tossed into salads. It's easy to recreate the taste of the Med on a dreary wind-lashed day in Britain. As long as you've got an oven, some oil and a host of fresh herbs you’re just a few steps away from scrumptious tomato preserves.

Slice the tomatoes

Preheat the oven to between 50ºC and 60ºC then using a sharp knife, halve the tomatoes making a clean cut down the middle.
Depending on the size of the tomatoes you might want to cut them into quarters.
