As you'd expect this recipe is all about the tomatoes but there's plenty of herbs and spices that can be added too. For one medium-sized jar of sun-dried tomatoes we used:
- 16 plum tomatoes
- 2 tablespoons of olive oil
- 2 teaspoons of caster sugar
- 5 sprigs of thyme
- 4 cloves of garlic (peeled)
- 500ml of extra virgin olive oil
- and a generous pinch of sea salt and black pepper
You can also throw in some chilli flakes if you like your tomatoes hot and fiery.
