Another simple way to add flavour and to keep the bird moist is to loosen the skin from the neck end by gently inserting your fingers where the skin and the breast meet. Push in a knob of butter (perhaps flavoured with herbs such as parsley, sage or thyme) under the skin and massage it further down along the breast.
Be really careful not to break the skin - it's so easy to do, but you don't want to go to all that trouble and get your hands only to find that the lovely buttery juices have collected in a puddle at the bottom of the roasting tray.
