Once you've mastered simple mayonnaise try swapping the lemon juice and water for lime juice and a handful of chopped basil for a perfect accompaniment to fish and cold meats.
Or stir in a dash of Tabasco and brandy, a pinch of smoked paprika and 2 tablespoons ketchup for a tasty Marie Rose sauce.
Finally, add ½ finely chopped shallot, a few chopped capers, gherkins, chives and parsley to make a delicious tartar sauce.
