If you've got one, you can also make mayonnaise in your food processor. With the motor running, gradually add the mild olive oil through the open funnel.
It's also worth noting that mayonnaise keeps well in the fridge for up to five days, so feel free to increase the amounts and whip up a big bowl that you can dip into.
